One of the things that I have learned about myself is I actually look for moments to celebrate every single week. I love seeing the beauty in life. There is so much negativity and bitterness in the world that finding the good in each day has become a goal. If you follow me on Instagram you know I love sharing easy recipes that the whole family will love. Today, I have an easy dip recipe that is so yummy and definitely a comfort food. This will not only make everyone happy but it uses the delicious and sweet Vidalia onions that has become a staple in our home. It is my favorite onion and provides so much flavor to ANY meal I add it to. If you're looking for a great dip to have during family time or to bring to your next girls brunch, I highly recommend this one!
If you are looking for ideas on how to create the atmosphere, choose the best time for your family. It can be after a long week on a Friday evening like we do. We allow the moment to happen naturally but there are times when we have a lazy Saturday that we add a few games to the mix and allow the kids to just have fun enjoying time with family. It’s these moments that I will miss as they grow up. I try to enjoy them as I’m intentional about creating these moments and this recipe is perfect to enjoy!
It’s flavorful and satisfying with the sweetness of the onion. See the recipe below, inspired by Pinterest but I changed it up to make it my own.
Ingredients:
1 Vidalia onion, anywhere from 10-12 ounces (any sweet onion variety will do)
1 scant cup mayonnaise
1 scant cup sour cream
1/2 cup shredded Grana Padano cheese, substitute good Parmesan or Romano
1/2 cup shredded mozzarella
1 cup shredded white cheddar cheese
3/4 tsp salt
lots of fresh cracked black pepper to taste
2 dashes Worcestershire sauce
Instructions
Set the oven to 375F
Peel and slice the onion in half. Then slice it in half again, and cut 4 of the sections into very fine slices.
Put the onion in a bowl with the rest of the ingredients and mix well until everything is thoroughly combined.
Taste and adjust the seasonings to your liking.
Spoon the mixture into an ovenproof casserole and bake for 25 minutes until browned and bubbly.
While the dip is baking, slice a baguette and place the slices on a hot grill pan to toast them on both sides or grab your favorite grain crackers.
Serve with the hot dip.

Since the acid in onions is drawn to water, put a bowl next to the cutting board or on the cutting board to prevent your eyes from watering too much. I tried it and it actually worked. Comment below and let me know if it worked for you too!
