4 Easy Steps to Vidalia Onion Casserole

Delicious, delightful yet easy to make is the mindset that I have when deciding on dishes with my family. With my kids home all day, my time has been limited. I’m adjusting just like everyone else to this new normal that we are living. Mealtime is my favorite time of the day because it brings our family together around our common love of food. It is a place where we bond over our favorite foods. Even though my kids are 4 and 2, I still see it in them that this is their favorite time of the day. It doesn’t last very long but it is a place that I am cultivating to be a place of safety, food, and fun between. Dinner at The Reed household will be one that my kids will remember felt like home in every way. No matter where they go in the world, our dinner table will be a place to reconvene as a family team.  

Recently, I had a box of sweet Vidalia onions arrive at my front door, and I could not wait to start creating my favorite dish, Vidalia Onion Casserole. This one is special in our home. It's good for the whole family and only requires a few easy steps and only a few ingredients. I will eventually make some nice tasty onion rings with these sweet onions but for now, we will focus on the super-easy family meal that moms will love. It only requires a few ingredients and four easy steps:

I wanted to share with my readers this yummy recipe that can be paired with your favorite poultry or even a nice Jasmin rice on the side.  

Ingredients: 

4 Vidalia onions, peeled and sliced into rings 

1 stick vegan butter 

1 envelope Ritz crackers, crushed 

¼ cup butter, melted 

1 cup shredded Cheddar cheese 

If you’re vegan or vegetarian, feel free to exchange out the butter or cheddar cheese with alternatives. It still tastes amazing due to the sweetness of the onions.  

Here is how I prep and layout my ingredients:

Now we’re ready to get started! 

  • 1. Sauté onions in butter until tender.

  • 2. Crush crackers into additional melted butter.

  • 3. Layer onions, cracker crumbs, and cheese in a casserole dish, repeating until all ingredients are used.

  • 4. Bake at 350° for 20 minutes, until hot and cheese is melted.

That’s it! 4 easy steps for you and your family to enjoy! A few things to note: If you have leftover onions you can make sure they last the longest by putting them in clean sheer pantyhose and tying up the knots in between the onions. When you are ready to use them, all you have to do is cut them at the knot and continue to store the rest. A tip I learned from the Vidalia! Enjoy!
